Running the report

1
Open Reports for your brand and choose Stock Items Per Profile under Stock.
2
Choose whether to Only show food cost items and whether to Hide store controlled stock items. The defaults suit most brands.
3
Run the report. Your brand controlled stock items are listed in a grid with one column per menu profile. A short summary of how many food cost items are missing model costs follows the food cost items.
TipRun it before you ask stores to start stock takes. Items shown with a dash under Model bulk cost still need a model cost.

Stock items per profile report

There is no date line because the report always shows your stock items as they are set up right now. The page is landscape A4 and the logo carries an Explain this report link to this guide.

  1. Brand controlled stock items: one grid per stock type, with a column for each menu profile.
  2. Food cost summary: how many food cost items there are and how many are missing model costs.
  3. Store controlled stock items: stock items created by individual stores (hidden unless you untick the option).

Brand controlled stock items

These are the stock items set up by your brand and shared by all its stores. They are grouped into up to three grids: Food cost stock items, Non food cost stock items and Stock type not set stock items. A grid only appears when it has items. With Only show food cost items ticked you see just the food cost grid.

1 Category - Item name (PLU) - UoM

The item's category, its name, its PLU in brackets (only when it has one) and its unit of measure. Items are listed alphabetically.

2 Has taxes

Yes (green) means the item has at least one tax rate set up. No (red) means it has none, which is worth checking for anything you buy with tax on it.

3 Model costs

Model bulk cost is your brand's target cost for the item in its bulk unit. Model wastage % is the expected wastage, and Model prepped cost is the model cost of the item once it has been prepped. A dash means no model cost has been set, or it is zero.

4 Menu profile name

One column for each of your menu profiles. Yes (green) means the item is included in that profile. No (red) means the item has been excluded from it.

Dash
No figure has been set for that column.

Food cost summary

Straight after the food cost grid the report counts your brand controlled food cost items and tells you how many are still missing model costs, with that number as a percentage of all food cost items.

4 Food cost items.
1 Food cost item is missing model costs. (25%)
Why it mattersStores can only start stock related activities once at least 80% of your brand controlled food cost items have model bulk costs. In other words, the percentage shown here should be 20% or less.

Store controlled stock items

Shown only when you untick Hide store controlled stock items. These are stock items that an individual store created for itself. Each store has its own heading with the store name and store number, for example Bob's Burgers Times Square, followed by that store's items and their stock type. A store's items belong to that store's own menu profile only.

Frequently asked questions

Why do I only see the food cost grid?

Only show food cost items is ticked. Untick it to also see the Non food cost stock items grid and the Stock type not set stock items grid.

Why is the Model bulk cost a dash?

No model bulk cost has been set for that item, or it has been set to zero. The report counts these items as missing model costs in the food cost summary.

What does No in a menu profile column mean?

The item has been excluded from that menu profile, so it will not be available to stores that use it. Yes means it is included.

What is the percentage in the food cost summary?

It is the number of food cost items missing model costs, divided by the number of food cost items, rounded to a whole percent. Aim for 20% or less.

I set the wastage to 12.5 percent. Why does the report show 13%?

Model wastage is shown as a whole percentage, so 12.5% is shown rounded. The figure itself is kept exactly.

Why can't I see the stock items my store created?

Those are store controlled stock items. They are hidden by default, so untick Hide store controlled stock items.

An item is missing from the report altogether. Why?

Archived stock items and archived menu profiles are not listed. Check that the item has not been archived.
